Khaman dhokla with a twist or simply called as Fried Dhokla or Masala Dhokla Recipe is a very famous and loved snack sold in almost every street of Gujarat. Due to its sweet and tangy flavour, it is no longer restricted to the region of its origin; rather it is readily available in every part of the country. Spicy Masala Dhokla or Fried Dhokla is a classic Gujarati dish with a sponge like texture and flavored with a spicy tempering and coconut. Khaman Dhokla is one kind of dhokla recipe which is soft, tangy and sweet, sometimes spicy, spongy and best healthy recipe for kick start of your day with teamed up on some other morning snacks.

Fried Dhokla | Masala Dhokla

Masala Dhokla is a classic Gujarati dish with a sponge like texture and flavored with a tangy tempering added with little lemon juice. Some recipes do contain citric acid for this tangy pinch but I prefer using simple ingredients and that too available in our kitchens only. So you can use lemon without bothering about the taste. This recipe can be tried any time when you are left with dhokla cakes and no one wants to actually have it; you just need some simple masalas found in the kitchen and go for the fusion of dhoklas. Fried Dhokla Recipe or Masala Dhokla Recipe is much similar to my earlier shared recipe for Idli fusion – Masala Idli recipe. I have used lot of veggies and spices for tempering left over idlis. Here in this recipe, however I have used left over dhoklas. Besan Dhokla or Khaman Dhokla is the base for this Masala Dhokla Recipe and here I am using already done dhokla cakes . Khaman Dhokla or Besan dhokla can be prepared with either chana dal (chickpea split lentils) or besan flour (gram flour, chickpea flour). It helps start your day with nutritious breakfast. Since these chickpeas are good source of protein and fiber, they are considered very good food. And good amount of fiber and protein helps to maintain sugar level into the body. And it’s also a glutton free. 🙂

All that we need to make Fried Dhokla or Masala Dhokla

To make this simple and easy recipe, all you need are very simple and easily available ingredients you will find in your kitchen 🙂 . This healthy and light recipe need very few ingredients; like Gram flour, curd, salt, chilli powder, garam masala, sugar, ginger, garlic and tomato, mustard oil, fresh curry leaves, green chillies, mustard seeds and tomato ketchup, shredded coconut and Coriander leaves.

With all these simple and easily available list of ingredients we are all set to make extremely soft, sweet, tangy and healthy masala dhokla or fried dhokla recipe.

 

How to make Fried Dhokla Recipe | How To Make Masala Dhokla Recipe

Here I am using already prepared left over dhokla cakes. You can make besan fresh dhokla or any other version of dhokla can be used for this recipe. No such restriction is there. For the basic Fried Dhokla Recipe, you can use the khaman dhdokla cakes; for the recipe, please follow the given link given above.

 

For tampering:

Take ginger, garlic and tomato; chop the three ingredients separately for further use. You can also use electric grinder or mixer or any other gadget to make smooth and fine paste of the ingredients. Personally I prefer the paste little thick and not completely smooth for that extra surprise while eating 😀 . Keep the paste a side for later use.

 

Moving forward to cook the final recipe, Heat a pan on medium flame and pour a spoon of vegetable oil ( I prefer mustard oil, for that aroma). Add mustard seeds and let them crack for a second; followed by adding fresh curry leaves and center halved green chillies. Toss them little at low flame so that they don’t get burnt.

Masala Dhokla

After a while, we need to add earlier prepared ginger- garlic paste and mix the paste with curry leaves and chilly  added. With the light pink colour of ginger garlic paste, add the grinded tomato paste in the pan. Combine all the paste thoroughly and cook the puree for a minute.

When the paste starts getting thicker, Now comes the time for seasoning the puree. To add the masala flavours to the recipe, add salt, chilli powder, garam masala, sugar and tomato ketchup to the pan. Let the masala cook for a boil.

Now add a cup of water and cover the pan. Let it boil for around 5 minutes at low flame. At the final stage, add the dhokla cakes to the masala; coat the dhoklas with the ready masala puree using spatula with very soft hands and close the flame. Garnish the hot fried dhokla with shredded coconut and Coriander leaves or finely shredded green chillies. Serve it hot or cold as per your taste with green chutney or dahi dhaniya chutney.
